Fireside Chat: Chef Chris Taylor & John Hutar – Sustainable Menus Sustainable menu planning reflects the decisions that organizers make regarding the selection of foods and beverages served at conferences and events. The choice of food and beverages can have a big impact on an event’s environmental footprint. Join us for this fireside chat and discuss how meeting planners, chefs and destinations can be intentional and make a meaningful effort to reduce its impact on the environment through waste reduction, energy conservation, and more.

Sustainability is considered a key element for touristic competitiveness. There has been an effort to show how sustainability contributes to tourism growth.
Events produce a large amount of waste, and it’s up to venues to partner with event planners to reduce it through eco-friendly practices and sustainable initiatives. Sustainability can mean different things to different planners.

Event Professionals are already charged with creating experiences and bringing visions to life. Since the pandemic, event professionals have taken on new roles. We’ll explore some of the ways event professionals have continued to provide value to their clients and community stakeholders.

Mascot Sports teamed up with Moxy Oakland Downtown to create the first ever Oak Run Co. House this past April 2022. Learn about this action packed 4-day event leading up to the Bay Bridge Half Marathon. A first of its kind in the industry, the Oak Run Co. House offered attendees a magical, physical experience dedicated to movement, wellness, mindfulness, and connection. Speakers:

Laura Putnam, MA, author of the award-winning Workplace Wellness That Works, is CEO and founder of Motion Infusion, a leading well-being provider. Her work has been covered by MSNBC, The New York Times, FOX News, ABC News, US News & World Report, Entrepreneur, Business Insider, and NPR.
She is a former urban public high school teacher, international community organizer, dancer, gymnast and now a movement-builder in the world of health and well-being. With a mission to get people and organizations “in motion,” Laura is a frequent keynote speaker and has worked with a range of organizations from Fortune 500s to government agencies to academic institutes and nonprofits. She is a member of the Google Vitality Lab, serves on the Everside Strategic Advisory Committee and is a contributor to Journal of Compensation and Benefits.
In addition, Laura teaches at Stanford University, is the recipient of the American Heart Association’s “2020 Impact” award as well as the National Wellness Institute’s “Circle of Leadership” award. A graduate of Brown University and Stanford University, Laura lives in San Francisco with her fiancé and unruly cat.

John Hutar, President & CEO of The San Francisco Peninsula In March 1997, Hutar moved to the Bay Area from Chicago to become the VP/GM of Hotel Nikko San Francisco. While at Hotel Nikko, he was a board member of San Francisco Convention and Visitors Bureau, SF Chamber of Commerce and the Hotel Council of San Francisco, where he was President from 2002-2004.
Giving a nod to his heritage, Hutar served as Honorary Consul for the Republic of Slovenia from 2001-2006. Recognizing his many industry accomplishments, in 2006, the Hotel Council of San Francisco honored him with their coveted Lifetime Achievement Award.
Hutar’s career path then took him to the world of gaming with MGM Mirage. He then returned to the Bay as General Manager of Sofitel (Redwood Shores), the Westin St. Francis (San Francisco) and Dina’s Garden Hotel (Palo Alto). During his tenure as GM of the Sofitel and Dina’s Garden Hotel, Hutar joined the Board of the San Mateo County/Silicon Valley Convention and Visitors Bureau (now The San Francisco Peninsula) where he served as Chair in 2015. In May 2019, Hutar took on the duties of President and CEO of the organization.
Hutar is passionate about all things music and loves exploring the Peninsula’s rich food scene. He and his wife Lisa reside in Burlingame and have three adult children.
Flavia Oliveira joined the Visit Santa Cruz County team as the new Director of Sales and Marketing in July 2021. Flavia brings over a decade of hotel experience with her to the position, in addition to having experience working with a destination marketing organization.
Flavia began her career as an intern in the hotel industry in Brazil while she was studying to earn her bachelor’s degree in Brazil. After that, she studied abroad and earned her masters degree in Hospitality Management in Switzerland.
By 2011, she had landed a job in sales with Marriott International in London. She moved to the U.S in 2014, and joined Visit Oakland in 2017 in a Sales Manager position. She then resumed her career in the hotel sector when she joined Hotel Paradox heading up its sales team. During the 2020 COVID Pandemic, Flavia also assumed the role of Regional Director, overseeing four properties in three different markets.
Flavia earned the 40 Under 40 Award from Connect Meetings in 2019. In 2016, she was nominated for the President’s Circle Award with Marriott International.
In her position with Visit Santa Cruz County, Flavia is responsible for sales in the areas of digital promotions, conferences and meetings, weddings, and cooperative opportunities for local tourism-related businesses, among other duties.
Nicole Hankton joined Visit Walnut Creek in 2019 as a sales and marketing manager, and was later promoted to lead the Walnut Creek Convention & Visitors Bureau in 2021 as Director of Sales and Marketing. A talented communicator, with significant experience previously in retail and hotel marketing at the Oakland Marriott & Convention Center and other properties in the Bay Area, Nicole’s position focuses on promoting Walnut Creek as a leisure and business destination to travelers for small meetings, conferences, social events, and weekend getaways. As a proud San Francisco Bay Area native, Nicole believes California is a fantastic and versatile place to visit in the U.S.
Rex Maxion, Director of Sales & Marketing at Moxy Oakland Downtown is an accomplished hospitality professional with over a decade of hotel sales experience. He has excelled in all aspects of hotel selling working for full-service to select-service properties amongst different brands like Omni and Marriott. Over the course of his career, he has built profitable partnerships with accounts that range from corporations like Salesforce to community focused businesses like Oakland Run Co. He also spent time working in destination marketing while at Visit Oakland where he learned the importance of community engagement and how that can lead to ROI. By combining his business acumen with a community focus at the Moxy, he has learned how partnering with local organizations can be a win-win. Rex has a Business Management Degree from San Jose State University and iConnect Association 40 Under 40 Class of 2020 Honoree.
Gina Giacalone, Director of Experience at Oakland Running Company has a solid background in event coordination, sales and the performance arts, Gina Giacalone has executed several forms of entertainment in her life from acting and dancing on stage from a young age, to planning her own wedding, and creating events made for a rockstar athlete at Oakland Running Company. A passion of Gina’s is making memorable, once in a lifetime experiences. With a flair for life, anything is possible as long as you can dream. Speaking from experience, Gina can inspire all to stop and smell the roses, in any way, shape or form. Enjoy learning about the magic created at the Moxy.
Tara Thomas, Tech Marketing Strategist, Co-founder and CMO of The Meeting Pool is a proponent of all things marketing, including strategy, product, branding, events, social media, public relations, communications, and operations.  Her background in technology applications and digital spans a broad set of areas including software-as-a-service, B2B, enterprise, financial services, publishing, real estate, and automotive markets.  She has over 20 years of expertise managing strategic programs for companies focused on technology including The Television Bureau, Oracle, 3Com, Visa, RightWorks, IPIX, Certain Software and The Cobalt Group, a leader in the automotive marketing space.At The Meeting Pool, Tara serves as co-founder and CMO, and works with a myriad of event technology companies and global meeting experts on strategies for marketing to the events industry.  She resides in Foster City, California.
